To be honest with the latest software and genuine hex+can cable (all the ones i see on ebay are k-line only so don't work on mk5-onwards) everything is pretty much point and click. Select your module and choose coding - hover the mouse over the the changeable fields and a popup display explains what changes can be done in that group, or hit the 'long coding helper' button where applicable.
For people new to vagcom i usually suggest changing the adaptions in the convenience control module - things like alarm chirp on lock/unlock, anti hijack locking etc. Practice on things that are simple like that but more advanced than using the MFA, just to build some confidence. Won't be long then before you're data logging engine data on your drive home from work
