I dont know how easy this is to do but would it be possible to change the lights behind the speedo and heater controls to light up blue instead of green? any input would be great

The speedo is easy, you can change the two clear bulbs for blue ones and then remove the green filter strip. There is one bulb lighting the back of the heater controls with a green filter over it, you'd have to remove the green filter and find a blue bulb that fits in there. If you can't find a bulb that fits you'll have to install some LEDs.

Thanks  so i could basically make them white instead? by just really removing the green filters?

Afraid not, I tried that and it ended up more of a sick yellow, looked awful  I'm in the middle of converting everything to LEDs at the moment instead.

Don't know anything about tinting headlights I'm afraid. The gear knob from a Bora should fit, a few people in the mk3 section have fitted gear knobs from mk4 Golfs.
