Talk to your dealer about bluetooth options, if it's a bigger dealership they may well be able to offer you several options, both VW and non VW.
I would hesitate taking apart the dash on a brand new car as you'll probably get a whole load of rattles afterwards!
You could take a feed off the fag lighter though I reckon and run it up behind the dash easily enough if you don't mind stripping the car apart a bit. Have a look on google for owners of mk5s who have done similar things, underneath the dash and console it is still mk5 Golf. SEAT offer an official option to mount a TOMTOM so it may be possible to bastardise one of their kits to fit a Golf without too much trouble.
