Stock brakes really dont like 100mph stops regardless of what car they are on lol (theres a lot of energy being dissipated there lol). You say the car was sat for a year? I take it the discs got pretty rusty as Ive had pads go off after clearing serious rust deposits from the discs. Your handbrake test wont show you much btw.
Oh and the servo amplifies the pressure the master cylinder outputs, if its gone the brakes will be crap as they will not be seeing the normal amount of force.

Rear calipers aint seized. I've wound them in and out to free them up. Yeah no standard brakes will like that. But I can't lock them up, or get the abs on and thats going 30mph and pressing the pedal as hard as I can.
Ok I understand how the servo works, but it can't be that because you can put the brake pedal to the floor and they still not good. The servo just helps right? If it was gone then I would have to use more force with my leg?

Usually if your servo is gone the pedal goes hard. I would guess the rubber flexi hoses have gone soft, if you clamp all 4 hoses off then press the pedal and it goes hard the servo, master cylinder is ok.

I still think you have air trapped in the system.

I still think you have air trapped in the system.
Have you bled the ABS? can be a bugger to shift the air from there, Mine had air in the ABS and i had to go to a mates garage to get it done properly.
If its been standing then it could have a lot of moisture in the fluid which will give no end of trouble and affect how it performs.
I would do all the pads and check the pipes then give it a proper bleed through.

Also worth replacing the fluid if it has been standing
