Why not get some mk2 GTI alloys.

because they look rubbish on a mk3??

No some look good, seen a lot of mk3 with mk2 alloys, Sebrings look really good.

After seeing this picture I got my hands on some Sebrings, although 15" wheels meant 'bye bye exhaust' so I put my 17's back on.

ok new question, so on offset of et35, using 25mm spacers all round with standard mk3 gti alloys and lowered 40mm. will i have any issues of arch clearance rubbing bottoming out etc?

Yes you will have arch clearance problems as 25mm spacers will take your offset down to et15, your going to need major work to get them to fit.
