I think installing a head unit in the mk4 double din slot be straight forward right? Get the new facia from halfords or somewhere but do you need to power the areial or sumthing as well?

Yep get a surround for the double din to single din, as for wiring not 100% sure if Mk4 golfs are ISO Standard, although Im sure someone on here can confirm.
If not just get an ISO lead

mk4's are iso as standard the only thing you will need is an amplifeid antenna booster
these are available from most car accessory shops
you can do it without but you may find you will pick up hardly any radio stations
