If you unplug the seat airbags it will log a code that you need an ODB reader to clear, so disconnect the battery before removing the seats and leave disconnected the whole time.
Once you re-install the seat and reconnect the seat wiring then you can re-connect the battery.
There will be lights on the dash (lots) but they are for things like steering angle and ABS stuff that clears within a 100m of driving.
I've had the seats out a few times like this and it's fine.
