I'm running 8x19 ET44 with 235 tyres on standard suspension and the fronts sit quite flush but the rears look like they could possibly take another 5 or 6mm offset (spacer).
However when the car is loaded fully (lowered!) the rear tyre actually sits quite close to the arch so it could be just the styling of the mk7 making it look like the wheels are too inset(?).
I'd suggest fitting the wheels and springs first then looking to see of you can get spacers in there still.
I'm guessing 8mm are the smallest hub centric size.
