On the fronts the GTI changed from Lucas 280mm to ATE 288mm on chassis 1H-S-560001 (VR6 changed from Lucas 280mm to ATE 288mm 1H-S-400001).
Rears are all the same 226mm discs and as said you would need new bearings pressing in (I can arrange to do that for you if needed?)
And with the abs rings you can usually reuse the old rings, although I have known a few to split on removal but I also keep them in stock.

(let me know what you need as I'm sure I can sort a package deal for you)

If you have these front calipers you have 280mm discs on front :-
http://www.ebay.co.uk/itm/BRAKE-CALIPER-FRONT-LEFT-VW-GOLF-MK-3-III-2-0-GTI-2-8VR6-1991-96-/371158080898?pt=LH_DefaultDomain_3&fits=Model%3AGolf

If you have these :-

You have 288mm.
Its the shape of the hole on top that tells them apart.280's have an oblong slot,288's have a diamond shape.
