Looking at a mk2 gti 16v tomorrow, might be getting as a restoration project, its a h-reg, 5 door, has done 160k though, do the 16v engines give much trouble? Better off looking for an 8V?

No trouble, get the 16v much better engine.
If its a "restoration" project then any old shed will do you fine.
However, The MK2 is built like a brick privvy. Buy on bodywork. Ensure its straight and has no/minimal rust.
Everything else - engine included - is easily repaired/reconditioned/replaced at minimal fuss & cost.

main thing is check when the belt was done, snapped belt = expensive on a 16v.

Oil leaks from the dizzy. Check for splits on the air ducting which along with damaged vac hoses make the 16v run rough.

My advice would be buy the least rotten one you can. And make sure if it's a 16v that the belt, tensioner and water pump were done within living memory. 4yrs or 40k whichever is sooner. Also make sure they used the proper waterpump with the metal fins rather than the cheap tat one with the plastic fins as they break down over time and you can imagine how good bits of molten plastic are to have floating round the cooling system.
