Well I'm finally coming close to completing the rebuild of my mk2, but I just want to make sure that I have everything.

In total, there are 3 holes for oil switches to go in.

From what I understand, the side of the head is the blue(?) and uses a higher (1.5 - 1.8 i think) bar

Whereas the one on top of the filter housing uses a lower pressure?

If I were to replace all oil temp senders and pressure switches through GSF, what parts would I need through their website?

There seems to be an awful lot of pressure switches and I am confused as to which to get...

if its an 8v:
large blue or brown, 0.3 bar pressure warning switch -> side of head
large white, 1.8 bar pressure warning switch -> filter housing
small white, oil temperature -> filter housing

if its a 16v:
large blue or brown, 0.3 bar pressure warning switch -> filter housing
large white, 1.8 bar pressure warning switch -> filter housing
small white, oil temperature -> back of head
small black, coolant temp -> side of head x3

And don't buy GSF ones, they leak. Get gen VAG ones from a dealer or TPS.
