How to cut down a loom

I'm building a mk4 track car and I was just wondering how to go about cutting the loom down.
I want to cut off all the crapy air bag, seat belt and seat sensor connectors, I was just wondering do I just cut them off and tape the loom up or do I have to remove the fuses for them or something?

You will need vagcom to switch them off or else you will get lights coming on.

Yeah I know but i want to know weather you can just cut them off and leave the exposed wire or do I have to do something to stop any current from running through them?

Better to leave the plugs fitted if you can.
