Like all highly visible options (big wheels, cool colour, sat nav) leather might help sell the car more quickly. However you'll still lose most (or all) of the £1700 you payed for it. Buy it because you want it and can afford it, not because it might have a residual value in x years time.

As analogue radio will be switched off in ~2012 i guess DAB radio will be a sort option too.

Analogue radio won't get switched off until the end of next decade. The earliest date would be 2015 which is over half a decade away. If you've still got your GTI then, you'll be able to buy a second hand RCD510 with DAB or upgrade to the latest version of the radio or sat nav.

AFAIK metallic paint is the only extra that actually adds to resale (in general).  Leather and auto for some high end cars (mercs / jags etc).  That said any extra will help sell your car quicker.  The GTI is in a funny position as its the high end of the medium / low bracket.  Its also a fashionable car which further complicates matter.

I wouldn't bother speccing anything to help resale.  Spec what you want, not what the guy in 3 years time wants.

Probably the best bit of advice right there.

TBH, It's gadgets that people love. Park assist, Rear view camera etc, etc. Also a sunroof is a really good re-sale option. As due to Air Con lots of people don't spec it, but for me it does add a bit of desirability.

That is quite true. If I had a choice of cars at the same price and one had more toys than the other then I'd tend to go for that one. However I would be wary of those kind of extras failing in 3 years time.
I already think my folding mirrors or at least the knob to work them is temperamental and don't hold out much hope of it making it to 3 years.

that is true.  but dont expect one that is fully specced out compared to a similiar one with less would have vast difference in price.  what extras that u have shelled out won't mean u get much of it  back- its only benefiiial to the buyer.  if u need it- buy it.  at the end of the day- dont buy a satnav if u dont use it.

As most small Vauxhalls now are white that's one colour to avoid, leather is only good if it is not tatty, VW's soon wears thin, avoid.
VW standard wheels look good after a few years.  The optional ones suffer from filliform corrosion, avoid.  Manual will soon not be available even as an option on most cars, avoid.
