It does sound very odd.
Something isn’t right for sure.
The acceleration of the mk8 is much crisper than the mk7 R owing mostly to improved throttle response.
I find the best way to keep the ECU on its toes is to vary the drive modes so it doesn’t get stuck in an assumption of your driving style. Same goes for the TCU.
As for the slipping at such low speeds, that should be easy for a tech to diagnose. He/she(/they/them

) should sit in next to you then drive the car afterwards to try and replicate.
Trouble is, even if they fix the car, once you’ve decided you don’t like a car you likely never will.
Maybe it’ll skid into a wall at 10mph (not injuring anyone obviously) writing the car off so you can buy a mk7.5 instead
