The £2000 is a sweetener from VW Finance and nothing to do with dealer margins, any discount will go over and above that as MH says.
If you're going the part ex route then don't expect to get top book price coupled with Drive the Deal discounts unless you're lucky enough to hit the dealership in the sweet spot of a sales manager being one sale away from a big bonus and them knowing your car will be snapped up as they have a potential buyer lined up.
At this time of year they're expecting a surge of part ex cars in with the new registration followed by the winter sales slow up. VW will possibly do more sweeteners over winter with finance packages (interest rates having just dropped) and other sales promotions but bear in mind part ex values drop off over winter too as they don't want dead stock hanging around for months covered in ice and snow...
If there's a longish lead time on a build then I'd attempt a private sale if your car is well specced and mint then go with a broker who will get the best prices as they tend to use the fleet department for those sales working on different targets and bonuses with more headroom for discounts.
There's no perfect way of doing it, just don't rush into a deal as there are always other ones around the corner, unless you're buying a model that's particularly sought after of course. And aside from the GTI CSS I can't think of another VW that has massive demand right now. The R is in over supply, there are millions of GTD's about and after Dieselgate they're not quite as good with residuals as they were a couple of years ago, and the poor old underrated GTI tends to get a bit ignored due to the R.
As for the Clubsport? Meh. I'd like to have a look at one to see what the fuss is about but...
