Just be careful as far as colour is concerned... what you think looks great may make your car difficult to sell at a later date. I saw a used BMW M6 in a dealership a few years ago with what could, diplomatically, be described as an eclectic factory special interior colour scheme... They'd had it 4 months, reduced it by, if I remember correctly, by £10K and the sales guy was telling me they were going to have to move it on through the trade...
Also, a re-upholstered car - even in a tasteful colour - may well reduce your target market because, no matter whether you think it is reasonable or not, some people will walk away or be suspicious of a car that has been re-upholstered.
