I could on my previous car but don't seem to have that menu for the golf.

Maybe it's something they haven been able to 'master'

No the changes stay.
You will be adjusting the cental electric control unit not the engine one.

If I were to purchase one of these, and then make a few changes to the vagcom options whilst it was in performance mode, presumably if I reverted to 'stock' those changes are no longer there

Sorry, I am in numpty mode here - can the Bluefin be used for changing menus as Vagcom ?

Im not sure what you mean at all. Bluefin device is just for added your remap at home, no real menus or adjustmenst

Im not sure I woulg go with this one unless I could see a rolling road result to see what power its kicking out.

Just out of interest you said 380 ft/lbs - you had anything else done to the engine or just a map??

From research I would expect a peak of  around 250bhp 260lbft torque with this map.
Not as big numbers as some but mkvikens car I drove once was extremely smooth.

I have Superchips stage 1, i would say around 250-255BHP  Awaiting a cheap rolling road session soon

i had bluefin on my rocco in march 2009, made something stupid like 268bhp at superchips and then made 243bhp on a reasonably honest dyno (where the garage were bluefin agents) so around 250/255

Yeah thats sound right - i think to 250 is a good jump for stage 1 - Were you curves pretty smooth?

I got told that the bhp of a normal gti leaving the factory varies between 207 and 245 bhp, superchips guy I spoke to said that one they worked on was 242 bhp standard before they even touched it, I am thinking of putting mine on a rolling road if I can find a reasonably priced one.
Gti, Candy White, 3door, DSG, Leather, Rear LEDs, Bluefin, Milltek, vwr intake, Focal speakers.
