i have found that my manifold is blowing pretty bad. would this be causing the problems with the running?

yes mate as it will be letting in oxygen,the lamba sensor will sense it and overfuel causing less miles per gallon and poor performance, sort the manifold and it should be fine!
Spec- Sounds awesome 2800CC VR6 200BHP Remapped with 7300 rev limit. Kent cams, cold air carbon intake kit. Forged pistons,power boost valve,6 branch manifold, de-cat pipe and full powerflow exhaust system.Grooved discs with red stuff pads. Gaz Gold fully adjustable suspension, 3.8 camber at front.
Full race cage, Momo steering wheel and corbeau race seats with four point harness. Fire extinguisher and 4.26 final drive conversion

   Simillar problem on mine unplug the mafm and see if that helps?

sorry for my dumbness but whats the mafm lol

As for the manifold i have got all the gaskets including the inlet gasket aswell. cost me 17 quid for all the gaskets.

Is it a hard job to change the gaskets and what tools do i need?

 Mass Air Flow Meter it is on top of the intake pipe behind the air filter, it,s usually a black box with hitachi on it. Just unplug it and see if runs any better.

i think i have already done that lol, i have kind of sorted it for now, i bought all the gaskets i need to sort my manifold, come to do it and whoever had the car before me has snapped the bolt off on the 1 side of the exhaust manifold, i have managed to use exhaust putty for now, i know it wont last but at least i now know what the problem is, just got to find a way of getting the rest of the bolt out the engine, i have a feeling the others will snap off aswell because they all look very rusty as if its never been touched from new.
