Taken from wikipedia:

Zero Offset - The plane of the hub mounting surface is even with the centerline of the wheel.
Positive Offset - The plane of the hub mounting surface is shifted from the centerline toward the front or outside of the wheel. Positive offset wheels are generally found on front wheel drive cars and newer rear drive cars.
Negative Offset - The plane of the hub mounting surface is toward the back or brake side of the wheel's centerline.

"Deep dish" wheels typically have negative offset or a very low positive offset.

The the pic below; Offset (ET): Distance in mm from center (C) of rim to mounting plane (M)

Also just to add, been on a useful website (http://www.gtsparkplugs.com/WheelOffsetCalc.html)

In comparison to standard rims:

-16x7 with et25 would 'poke' the wheels out about 23mm
-16x7.5 with et30 would be more like 25mm
-16x8 with et35 would be very similar but you might then have to run 10mm spacers to clear suspension struts/brake calipers creating an offset of et25 which would stick the wheels out by about 35mm causing you to need arch work

Basically if your going for a deep dish effect properly you'll have to get arch work done

7.5 wouldnt be as dished as the one in the pic above would it? think the one in the pic is 9.0

Yes that is a 9x16 inch wheel, the lenso bsx's on come in 7.5 and 9's,and the 7.5's have nowhere near that amount of dish,a set of those lenso's in 9's will cost you nearly a grand with tyres, calibre also do a similar wheel call the vintage that are cheaper and i believe have just started to produce them in 9's but they only come in 17inch.

I'd imagine you'd need quite serious arch work and a fair amount of stretch to fit 9's properly.

Yes you do :D

You can run wide-a$$ wheels at standard height and have no problems (spacing them out if they foul the coilover). Its when you drop the car you have problems and there is no point running deep dish wheels unless you got lows IMO. Grab a hammer and a dolly and whack your arches out; arch rollers are crap.

I shall be getting my hammer and dolly kit out very soon :D

-ve camber might help your arches not to die.

Careful with wide wheels with an averageish offset with camber though because they might rub the coilies with too much camber.
