Shove something flat underneath the front of the plastic surround that goes around the gaitor and shiny trim and gently lift it from the front. Either a trim removal tool or expired credit card is useful if you don't have steel finger nails.
Peel gaitor upwards to reveal big metal clip. Cut metal clip and lift knob and gaitor off.
Slide new knob onto shaft (fnarr fnarr) and clip up the metal clip (or better still use a hose clip that can be unscrewed, costs about 50p from B&Q or wherever) then once it's nice and tight over the shaft (fnarr fnarr) slide the gaitor and plastic trim into place and clip it into the centre console.
Get some elastoplast for your cuts and then return to admire your handywork.
Go for a drive.
