When you take car in, VW paperwork should have a box, asking your permission if tech can remap your car.

DSG service is real easy. After the DSG oil change, tech will perform a recalibration which involves among other things, running the car in an odd and even gear at a certain speed for 10 mins...

once the tech has carried out the oil change, to tell them not to drive your car is silly. They need to test drive it to make sure it dont bang or jump into gear this is done by carrying out basic setting which can only be done by you guessed it a road test. Not only will you be pissed off that they give out your details you will be even more pissed off if your dsg box fooks up cos they could not carry out the dsg service corrcetly. as for the man with your details 2 things you could do 1 run him down in your car when he comes for you or buy a big bat and tell him meet you in the local park on sunday and beat the sh!t out of him problem solved.

....Also, by refusing to allow your VW garage to conduct a test drive, they will be obliged to relinquish all responsibility for their work done and this could raise serious safety issues. In practice, most garages would quite justifiably refuse to do any work on your car at all if you insisted on such impositions.

If you feel you mistrust your dealer so much, you would be better off finding a different dealer to work with. Besides, there isn't a lot of harm apart from crash damage that a VW qualified mechanic is likely to do - The GTI is designed to be driven! I often go out with my mechanic driving and value his input.
