its a bit of a pig of a job, you basiclly have to remove the whole sunroof unit, runners and all, to do it properly. you need to wind the roof back, undo every screw you can see. wind roof closed again, then from the inside push it up and forward to get it out, be carefull of damaging the roof though.
two people help and its not much fun if trying not to scratch anything!

i think he's asking how you replace the seal around the sunroof, not how to remove it.  :undecided:

removing the sunroof to replace the seal is easy....

wind the roof back about halfway, and pull the lining down from the front, then wind forward to remove the lining.
theres 6 screws iirc to remove, looking up at the roof you'll see two retaining clips, just lift and pop these off, then there is a few bolts used to balance the level
thats about it, everyone reccomends getting a hand at lifting the metal out, but its lightweight and not difficult to handle
pull the felt seal out from round the edge, then just slide and clip the new one on...i used some silicone to help the seal stick to the metal as it was loose in places

if you want to spray the inner roof, you need to remove the running gear, basically remove most screws you see, then get in the car, and remove the winder and there is a couple of screws holding the mech in.
then you can basically lift it all out, be careful it doesnt come apart, its hellish to refit!

....now the hard part is refitting it without leaks
