I havn't done it before but I think its pretty straight forward.
1. Remove all the switches, heater controls, stereo & blanks, then take out all the screws holding the clocks surround in. There should be 3 around the heater vents, 1 behind a blank, 1 in the stereo hole, 2 above the clocks and 1 behind the headlight switch.
2. Take out the centre console & dash undertrays, held in with several screws.
3. Remove the dash clocks, with the undertray removed you should be able to get to the plugs, they'll be stiff but will come out.  Then undo the 2 screws holding it in, and reach round the back from the left side to unclip the speedo cable, you need to squeeze and pull, it'll also be stiff!  There may or may not be a vacuum connection to the middle depending on if you have a GTI or not.
4. Prise out all the heater vents and then lever out all the staples holding the tubes to the back of the vents, and the retaining screws.
5. If you have dash speakers installed, remove the speaker grills & the speakers
6. Remove the glovebox light and unplug it
7. I'm not sure but the fusebox braket may be attached to the dash, if so you need to remove the white clip from the left side and unhook it, it will drop down out of the way
8. There is a bolt eather side of the dash, 2 more underneath and a couple more in the scuttle area under the plastic rain tray,

Runjonny... all sounds pretty spot on except from what I can remember (couple years ago) the fusebox isn't actually bolted to the dash and has a seperate bracket of it's own.

It was just the 2 bolts under the scuttle panel that I didn't know about and ended up so frustrated thinking that all were out knowing that no matter how hard I pulled it still wouldn't budge!!!

Cool, the Bentley says you need to remove it but I was sure the brackets would be seperate, thanks for the confirmation :)
