Would there be an issue topping up the GTD with some Castrol Edge professional 0w30? The low oil light pinged and I've only got this stuff to hand.

This will not have 504/507 approval, which is the only oil allowed for diesels (DPF). If the 0w30 is ACEA C3 you're probably OK using it (unless it is old LL2 spec, i.e. VW 503.00 spec), though would check what manual says, think it says that you may use 0.5l other oil if LL3 oils are not available. Otherwise you'd theoretically void warranty (VW may check in case you have any engine trouble).

Yeah cheers, checked the dipstick and the oil level was in the middle between max and minimum. Went out in the car today and no error light came on, bit of a strange one.I'll pick up some correct oil just in case it does come back on.

I had a low engine oil light today and popped into Shell.  None of their 5w30 oil has VW 507 listed on the back anymore.  It used to as that is what I bought previously.  Their 0w30 is rated for VW 507 now though.
