Could be a faulty thermostat. I personally get replacement thermostat or even chuck it in a pan of water with a thermometer and see if it opens.

Sounds like one of the 2 parts you have replaced aint doing its job. But if the thermostat was faulty and running the engine cool, I would expect the temp readings to be at 70 as it is overcooling??

Im sure I read somewhewre a while ago there was 2 coolant sensors. Perhaps not then.

that's what I'm being told, I'll get another thermostat and see what happens it's a pain in the ass to fit though! haha yeah it says on vag com it's at about 65-70 degrees, soon as I stop it'll climb to 90, yeah I had the heaters on hot when I.was adding coolant, and it blows hot air on.the hot setting and cold air on the cold setting

I have the same problem with my AUM, had waterpump changed and whilst changing that they changed my coolant temp sensor and thermostat, after I noticed that temperature wouldnt reach 90 after warmed up after a motorway blast. But once stopped idleing it would reach 90.. i've also noticed that my fans dont work correctly with air conditioning unit, the small fan stays on when engines running, and when air conditioning is activated the fan switches its self of, unplugged the relay for the air conditioning and now the fan doesnt run on, but now when the can eventually reaches correct temperature, the small fan activates to cool the engine down?.. is that normal? Shouldnt the main BIGGER fan activate instead? Any help or advice? ?   Thanks, grant
