Newbie needs help choosing Mk5

Hi - I need a new car and love the look of the 5 door Mk5 over other cars in its price range.
My last car was a 2005 MIni Cooper S and it was heavy and guzzled fuel but I preferred a bit of speed over the normal cooper.
So I like a few extras and torque but I don't like worrying about the cost of petrol.
During the interim I've been driving a 1998 ford fiesta and its so comfy and runs on air but I don't trust it on the motorway as its done 98k miles and has an oil leak so is going to be scrapped once I buy the golf  :cry:
I've been looking all day and am more confused than ever?
I'm looking btw 5-6k and preferably low mileage.
A 1.6 Match 06 plate is avail at £5.2k with 53k miles - good equipment and mpg but reviews say its sluggish?
A 2.0 GT FSI 05 plate with at £6k with sat nav and full leather with 39k is my favourite choice but will it guzzle petrol!?? My gut says yes but I love the leather as lots of fabric seats look water stained in the pics.
Am I better off with a 2.0 GT TDI - is this the best Mk5 option?
Or a 1.4 GT TSI the ultimate golf?
I know I can't afford a GTI!

Also I can't believe electric windows aren't standard in the back seats of Golfs!
