Pretty easy mate - you will need 2 grilles - one standard 5 bar, single headlight with the badge, and another one to cut a section from (doens't matter if it's a twin or single). Cut out the middle of the single one, around the badge and cut a similar sized section of the 'donor' grille. Whop some plastic filler over the joins from the back (or some glass fibre) and spray the whole lot in satin black.
It's a good idea to get 2 original VW grilles though - the copies are ever so slightly different...
