youve got 3 options.
239mm standard gti 8v brakes, not bad but any more power and its,
256mm 16v brakes, these are quite an improvement on the 8vs but youve also got,
280mm g60 brakes, the biggest standard mk2 brakes avalible.
for the 16v and g60s you need to upgrade the master cylinder to 22mm and possibly the servo.
however its no good fitting big stoppers to the front when the rest o the brakelines are sh!te and the compensator is goosed.
i fitted 16v brakes to my old car and they worked a lot better than the ones i have now(280mm)
make sure you use a decent fluid and some half decent pads and discs and that you give the system a good overhall.
