how on earth do you remove the ignition barrel on a mk3 golf gti 8v 1996

I hear its a pain, not really sure tho. What's wrong wit yours? When mine got had to start I fitted a push button. A lot cheaper than replacing the barrel. Think the whole coloum might have to come out.

done it today swapped 2 stering colums over and the cars never started because the keys are chipped so i changed the rings around the barrels but still didnt start

You will need it reprogramming with vag com.

Ummm but how? I mean I cant see on my key how to go about it and would be a useful thing to know!

destroy the key till the chip comes out ;)
most ofd the chips are glued in but usually wont take much to get the chips out, some aftermarket ones are moulded in which case brake out the sharp implements! one of my aftermarket keys had like a square insert bit which pushed in from the back with the ship on the end, just levered out.  tbh haven't got anythign to loose from trying if gonna chuck old key away anyway!

this is factory key with light, key without light is similar. chip is in the half at the bottom of the pic, square rectangular thingy. on these it should lever out with minimal effort:
