If you're just using it at the pod then go for the 1.8t or VR6 to give you that instant power.
If you want to keep (close) to standard, and want a car that will be fun to drive on the twisties, then the standard 16v or ABF if you want to do a swap. Even the 8v is fun drive on the B-roads, and feels similar to the 16v until about 5k rpm.
There are quite a few G60 conversions out there, using the Corrado engine.
I have a feeling that you'll go for the 1.8t or VR6, since you are used to the turbo on your mk4. The standard MK2 engines aren't so much 'pushed into the back of your seat' acceleration, more of a constant pull, resulting in 'wow, we're going that fast already?', which you experience when taking the 16v from about 2k rpm to the redline in 2nd or 3rd.
