Cold weather/radiator problem??

Hey all, went to Wales over the weekend, and on the way up, the old girl dumped all her water. Saw steam coming out from under the bonnet, so pulled over, popped the bonnet, and water was pissing out of the expansion tank. So topped it up, and over the course of the weekend, she did it 5-6 times. Got home, went to GSF today, got one of the blue expansion tank caps (mine was the original, black one) and it fits a lot better, and there's actually pressure, as in when the engine's warm, and you loosen the cap, it hisses, it never did with the old one. But on the way to uni, after picking up and fitting the new cap, the engine temp went over halfway on the gauge, which it doesn't usually do. At this point, I turned the car off 'cause i was at uni, but on the way home (about 10 mins later haha) it went up to halfway, and then the radiator kicked in (i guess, i didn't actually hear it) and the temp went down, but only to just below the midway line, whereas usually it drops right down to just above the white block at the bottom of the guage. Would this have something to do with the pressure in the water system, or could it be the weather, as it's been cold today, which it hasn'tbeen recently.

Possibly a lot of air in the system.

I used cheap anti freeze in the past and had similar problems. Used the VAG stuff G12++ and havnt had this problem since (touch wood)
