why not try and fill the holes where the damp is getting in? or are they drainage holes hehe?
best bet is to get the car completely dry is to take the seats out and dry them, then check all through the car for possible leak spots, then seats back in, and as long as you've elimnatied all damp spots then you should be ok... is there definetly not any puddled areas on teh floor pan of the car? have the seats been damp all the time that its been fogging up? you need to get the car completely bone dry, and also give the windows a good clean and polish ont eh insides, so that there is less crap for the moisture to stick too, and if it does fog up, the blowers will clear the screen alot lot faster.
the less thats in there the better, so wouldnt think puttin all the carpets and everything back in would help.
