What I suggested didn't work?

The skoda one might work but might not. It's probably exactly the same data but suspect the check it does will fail.
Current: Mk8 GTI DSG, Adelaides, DCC, HUD, HK, Winter Pack, Rear Camera.. Aka "HMS Weasel"

Gone: 2017 Mk7.5 GTD,manual, NavPro
Gone: 2014 Mk7 GTD, manual, NavPro, DCC

VW and Seat maps are exactly the same so may well be worth the shot trying the Skoda ones. If you still get stuck send me your sd card and I'll put them on and send it back.

OK, so, if it is any help, I updated mine successfully last night as follows:

Download the maps for your car/year/media version from the VW site…

I am on Mac computers, so used “Keka” to open the archive and create the folders for transfer. A single folder called “Maps” is created with all the data inside. Does not matter where you do this. (Mine is the standard discover media, not pro, I am just downloading the pro version now to see what changes there are between the two)

Insert SD card from the car into reader. Delete contents (I used Carbon Copy Cloner - CCC - to back up the card first) using a select all and option-command-delete (immediately delete rather than create a trash on the SD card… I also used the shift-command-dot to revel the hidden files created by Mac OS on the root of the SD card and deleted them…

I then copied the “Maps” folder to the SD card… I used CCC again here… But I cannot imagine that a simple copy/past would not work just as well… But I used CCC as you can verify the exact copy…

The SD card then worked right away in the car with the new maps.

You can unarchive using Keka directly to the SD card, if your card is blank already… But I found it easier to do it as a two-step..

One thing to check.. I note you have a 20 model year 7.5… You are downloading for files for the 7.5 (which would be GTI from 2017 in the options) and not the Mk8 (from 2020) right…???  (Edited to add - I just checked and Mk8 files use a different compression to 7z so, as you are talking about 7z, you cannot be downloading the Mk8 ones.... sorry...)

The config files in the maps I downloaded from VW yesterday for my Mk7.5 GTI include settings for Seat, Skoda and VW...

Cheers for the replies and offers of help. The Skoda update worked just fine. Handy to know I can do both cars from a single download in future. Utterly ridiculous that different brands in the VAG group adopt different standards. At least Skoda have kept it simple!

To be fair the VW update is perfectly simple and fine and I've never had any issues. Glad you're all sorted though in the end 👍
