Getting the parts from the dealer will be expensive but you can buy them on Ebay or from breakers yards.
I got the following parts for my 8 Clubsport (see bottom pic for the correct part numbers).

The part numbers correspond to the wheel, tyre, lower foam (aka tool box base), upper foam (aka tool box cover), wheel bolt wrench, securing strap for foam, jack, jack handle, securing bolt for wheel to floor pan. You can transfer across the towing eye, locking wheel nut key, wheel bolt cap removal tool into the new toolbox.

You will also need part number N90871301, this is a press stud that fixes the lower foam to the floor pan. There's a stud in the floor pan that needs to be exposed by pushing it through the carpet (see pic).

As others have said with the Clubsport or R the spacesaver doesn't fit on the front because the brakes are too big (think this is why VW don't let you spec one from factory on Clubsport or R). If you get a flat on the front, just need to fit the spacesaver to a rear wheel then fit the removed rear wheel to the front, no dramas there.

AS per my original query, I'm still searching for a suitable space saver spare wheel, plus jack/tools, etc. Not easy if avoiding original VW bits!
I have come across a new wheel including the jack and tools from a company called The Wheel Shop at what seems a reasonable price. Has anybody come across them before, or had any experience in using them?
Yes I bought an 18" space saver and a jack kit from them for my 2020 Audi A3. No problems with the wheel shop. I sold the Audi and now have a mk8.5 GTi with a HK subwoofer in the boot. The wheel fitted perfectly after removing the subwoofer first and then re-fitting it. I don't have the inserts that fit around the spare wheel to store the jack kit, but the jack kit came in a bag with velcro strips on it which sticks the bag to the boot lining. I also have a storage net which helps to hold the jack kit in place.

I suppose the next question would be, is there a wheel out there that will fit over the front brakes.

There was some discussion on another VW forum about an old Audi TT spacesaver that might do the trick. I need to do some more digging.

I think the unknown about those is if they'll fit in the boot well. I expect that they won't so you'd need to carry it in your boot all the time.

I'm guessing by the price it's this one from Road Hero

I highly doubt it'd fit in the wheel well though I'd love to be wrong.

Not sure about the Golf, but the Road Hero spare certainly doesn’t fit the spare wheel well for some other cars I’ve considered; the Road Hero spare is supplied with a storage bag and the bagged wheel lays flat on the boot floor, taking up valuable boot space.

That would stop me getting one - especially if boot space is important.

How important is it to get a spare that is as close to your original wheel size as possible?
I have 19" wheels, what size spare should I buy?

You need the 18 inch space saver wheel, which will fit in the wheel well. Compatibile as a temporary spare for cars with 18 or 19 inch wheels.

The space saver being advertised at the link below also has the same part number (1J0601027M) but the ad. states the PCD (bolt pattern) is 5x100 which is the bolt pattern for the mk4 Golf and the Polo.

The mk5 Golf and later models of Golf have a PCD (bolt pattern) of 5x112, so assuming the Audi space saver in your post is the same as the one in the link I’ve posted, it wouldn’t fit a mk8.5 GTI.
