I would say that they would have more margin in a year old Passat due to the amount of ex fleet cars that are available to them, therefore more discount for you to negotiate.
Your car is worth what it's worth regardless of what you are trading it in for. They can manipulate the figures to show anything on the invoice, but as Wigit says, it's what it costs to change that matters.
As a humdrum do everything well without a fuss kind of car, I don't think I could have done much better than my Passat 140 DSG Sport Estate. It's very comfortable, quick enough for 95% of all situations (especially after a remap) very economical, returning well over 50mpg all day long and has a massive boot, which is something that lets SUV type cars down. Don't buy new tho' when you can get a year old one for £10k less than new price.
