My early S3 engine mk3 golf has currently got a standard dump value, if I upgrade does this mean the car to be mapped again?

No, people replace the DV on 1.8T because the OEM are such poor quality, especially the earlier 1.8T. Rubber diaphragms were prone to burst.

just becareful buying a universal dump valve for the 1.8t as these engines rely on the gas being recirculated through the engine and everyone I know who's fitted an atmospheric valve (noisy one) has had idle issues!
