I already have Forza 3 but got the Forza Ultimate Collection for Christmas. Does anyone know if I can use the Ultimate Collection Cars and Tracks with my existing data without having to start all over again !!

there's a thread about this on the forzamotorsport.net forums which shows how to install the ultimate pack without causing issues (and how to save a bit of memory space by not duplicating files)
