well daily driver the MK3 gti is on the drive and the MK2 campaign and the Mk1 gti are both garaged as they are both under restoration.

How about both !  As long as the body work is tip top you can always put in a new engine etc

So are you saying that any mk1s, mk2s etc that have had engine transplants shouldn't be considered as a classic in the future
