The rear seat is fairly easy to take out.
There's 4 (I think?) allen key bolts at the front edge of the seat, removing these will mean you can now remove the bottom section of the seat.
To remove the rear section is slightly harder (or I thought it was, but I was 17 when I removed mine and had never owned a Mk3 before).
If you fold the rear section down you can see there's 2 clips in the centre of the rear seats, I removed them with a flat headed screwdriver. Then the outer ones (where the doors are) are pretty obvious!
