i think you just need to take make it work. dont think you can move the PAS pump out the way unless you remove it completly.

hello mate.
I just removed the engine out of a mk2 today so got you some pics. everyone has their own way of doing things i just unbolt as much as i can
If the 1.6 is anything like the 1.8 8v gti then..

Get the belt off.
There might be a few other bolts you need to remove but i cant remember. should come off and give you access to the thermostat housing.
I cable tie the PAS pump out of the way.
Dont overtighten the housing...will crack!
might want a new O ring too.

Mate your a legend gonna go out an have another bash at it! will update in a bit! Cheers

it is a right sod to do, there is another bolt to the left/right of the bolt in the last pic, but i think that just about covers it. i recal there was a right arse of a bolt burried between the pump & car, but mind is a bit fuzzy...

Right iv had to abandon this for tonight! Cant get the long bolt out at all, have got the nut off but cannot seem to get the bolt out! Iv tried to lever it with a big bar pushin the bolt from the one side to force it through slightly but its wedged solid!! P!ssed off because was supposed to be goin out in the motor tonight ! Any one got any ideas that i can try tomorrow?? Cheers

A hammer and a flat head screw driver or a pair of mole grips and twist it out?
you might need to push the bottom water pipe down to clear the bolt when removing it.
I think you can leave the bolt in and swing the whole PAS bracket upwards. Really cant remember much.

Yer i think it wouldnt be such a b*stard of a job if it wasnt for that long bolt i had so much trouble with, was proper wedged in there!
