scrap the metal for about £150...

advertise on here and other plaes for bits, be prepared to pack parcels..

best thing to do is stip it to order over a few weeks (then you dont get a garage of bits that no one wants) to a month then when it needs gone just book a scrap man to come get it.

when its gone be prepared to get requests for stuff you wish you had taken off, then when you buy your next mk2 count the ammount of times you say "i wish i still kept that bit"

oh can i have a golf ball gear knob

Yeah don't break it! They need to be and SHOULD be on the road, if you break it there will be 1 less MK2 on the road.
It took me almost a year to find a good one, so sell it to someone who is itching to get into the VAG scene!

TBH your probably best off selling it, that way another mk2 stays on the road a bit longer but more importantly as far as your concerned someone will appear with money and car will go away job done sorted.  problem with breaking cars to sell the bits is you have to break the car, then sell the bits  which can take time then your more than likely going to have to post stuff.  tbh  i can't ever be arsed trying to sell much when breaking a car normaly ends up been more hasstel  so just extract what i'm going to use or ppl i know have asked for then scrap it
