I have bought some mk4 rear calipers to put on my mk2, ive bought the convertion kit aswell, put it all on the car, then it would only bleed on the drivers side. when i tried to bleed the passanger side, nothing happened, Please could anyone shed some light onto this.

Open the brake bias valve fully, then try again.

How can i open it, is it easy to do?

You'll find it in front of the nearside rear wheel. There's four brake pipe connections into it and a lever arm with a spring on the end. Set something up so that the lever arm is stretching the spring as much as possible - the valve will be open then.
In my experience, you'll still need to spend a good 10 minutes determinedly pumping fluid through before the bubbles clear.
