Its difficult to do anything to change the interior without spending money on, errr, a new interior.  Unless you want halfords stick on chrome trim and a wolfsburg badge?

How much is "not much" ??

you can make it look good by spending a little money on some decent interior cleaners and invest some time on it really detailing it... ok.. it might not be different but unless you go down the new interior route you aren't going to make it look 'different' without spending some wonga

Get a corrado dash (or do you have that already) and get it colour coded leather trimmed at a specialist, then fit a digital display from a golf II 16v

i took my ashtray out and put my stereo there and fitted vdo gauges in the top
carpeted the shelf below the glovebox

thinkin of gettin the chrome stripe in red someone correct me but did
they do a mk2 with a red stripe on the dash instead of chrome

the look has changed quite a bit anyway and it cost nothing apart from
buying the gauges

Got a photo of how the dash looks now with the gauges at the top and stereo at the bottom? I was thinking of doing the same thing for some time :)
