If you had ?1000 to spend on a standard Mk3 GTI what would you do?...

I'd go for uprated suspension (in the guise of coilover suspension, strut braces etc) and uprated brakes.
Not only will this allow you to maintian a higher average speed, by allowing you to brake harder and later, and carry more speed through the bends, but it will also be a good platform for when (if?) you decide to up your engine's output.

Suspension first, brakes are quite good anyway, then mod the engine.

Yeah suspension but what about standard wheels...they're boring! How much are the BBS split rims found in the VR's? Could I get a second hand set of wheels (reconditioned), uprate the suspension and chip it for a grand. Also would like debadged grill, mk4 style head lamps and crystal fogs, indicators, side repeaters (to clean it up a bit). And maybe a subtle exhuast back box.
I want it to look fresh but be quick as well.

leave the cosmetics till last mate, take VR6s advice.
I had a grand to spend recently, but the missus insisted it got put away towards the savings :(
........I did manage to find a baragin pair of BBS rims tho, they look great!
