ive done fords before but how hard is it to do brake disks and pads front and rear?

fronts easy
rears a bit of a pain, need to do the bearings, and sometimes the handbrake cable can stick on.

do you need a special alan key to release the calipers??

On the fronts you will need an allen key, or a allen key socket would be better. Beware of the bolts rounding off, so get a new set and guides from vw.

When you do the backs you need a piston push in tool that you can get from halfords.

or you can bodge it with a 'g' clamp
