just wanted to know if it would be possible to just change the engine without having to change the loom etc etc.
how easy or difficult it would be?

if you fitted the engine complete, you would have to change the loom as well, its completly different.
If the MK3 head is ok, you can fit it to the PB block and everything will plug in and work in theory.

You would need MK2 belts, and swap all the MK3 mounts onto the MK2.  Also the gearbox will have a larger input shaft, so you'll need to fit a 16v clutch kit to the MK2 lump, OR fit the MK2 gearbox and fit the MK3 box to your MK2, assuming its ok.
