This problem seems to raise its ugly mug every so often. ALthough I've never been able to sort it out. The light flashes even when you unplug the sensor, dont even get a chance to bridge the pins!!!!
Where's the best place to start looking?

The light will flash if you unplug the level sender ;) Unplug & bridge it with the ignition off, see where that gets you.
If that don't help, try replacing the black temp sender for the dash gauge, its located in the plastic coolant flange on the front of the head.

Is that in the 8v?
This problem is on a 16v.

ah ok, the sender is one of the screw in ones on the RHS of the block, will have a red/yellow wire. Swap it to any of the other similar looking ones as they are all the same.
If it still flashes then its likly to be a prob with your clocks!
