Might sound like a silly question but have you check the wiring that goes into the ignition switch.

I've just had my ignition switch/barrel etc changed by my local VW garage, they said it was the reason for my bad starting.

They said that 3rd party immobilisers and alarms not fit correctly can knacker the connectors on the back of the switch etc...

wiring and connector appear fine not sure how the system works as you dont have to turn key for radio to activate its obviously different to mk 2 and no doubt more expensive
the removal of ignition barrel lock and switch frightens me as there are shear bolts to drill out but does anyone Know if you can remove switch without taking all this off steering column

i have phoned around a few places today and have been told that ignition switches on mk3 are popular faults so i think its favourite how hard is the shear bolt to get out of ignition lock clamp?

I just changed the ignition on my mk3. (Burned out the radio turn on trigger).

I took a 'whizzer' and cut a notch on the sheer bolt.  Now its a screw, I can take it off and put it on like any other screw.  You can use a dremmel or rotozip if you got one.  I used an exhaust cutter (It's a pretty big screw and it really isn't on too tight)
