Really pleased with my 8.5 which I bought in March. One concern I have is that when moving slowly 5-10mph over uneven cambers or surfaces, I hear creaking from all the doors and it sounds as if the chassis is flexing / body very slightly twisting. I have the pano roof and I wondered if this makes the body shell slightly less rigid?

It’s likely that the door seals have dried out and they’re moving / rubbing against the bodywork when the car body flexes (slight flexing of the body is normal). Some car cleaning products can cause the door seals to dry out and some waxes / sealants can also make the seals squeak and creak. I think that 3 or 4 of the five VW’s I’ve owned have suffered from the creaking noise you’ve described (none of them had a sun roof).
Applying a lubricant such as VW’s Krytox, Gummi Pflege or similar product to the door seals usually cures it. Krytox is quite expensive for a small bottle but a little goes a long way. With Gummi Pflege you get a much larger quantity for much less £’s but it’ll likely need to be reapplied more frequently than Krytox.

In my experience, the creaking you describe usually comes from the door seals, in particular the flocked furry part that runs along the top of the doors. Having tried many products on many GTI’s over the years, the only thing that I’ve found to deal with that area specifically is Normfest dry lubricant spray, https://ebay.us/m/RE4t7A
As mentioned above, Krytox etc are very good for all the other seals, I found that they didn’t apply very well on the ‘furry’ seal though, and were a bit messy in that area because of it, I have had good results with the dry lubricant in the link. What ever you use it will need re applying periodically.

Thanks for the suggestions. Dry weather probably not helped
