We've got a 2019 GTI Performance, manual that we have owned since it was 5 months old. The first owner was VW.
I decided to look at the ESC mode in the vehicle settings at the weekend, and it had 3 choices:
-activated
-ESC sport
-ESC off
This surprised me as I thought only the R had the ESC off option.
The owners manual states the GTI should only have, activated/TCS off/ESC Sport
Could someone else with a 2019 GTI see what their choices are?

I have a late 2018 car.
Interestingly, my manual states that if you press the button for 3 seconds- for the gti- TCS is off but ESC goes to sport. As you say, for the golf R, ESC can be switched off ( according to the manual)
Just checked my car- contrary to info in the manual, in fact I can turn ESC “off” with a 3 second press.
It’s been a while since I tried this so I’m not sure if this completely disables the stability systems- I suspect it would kick in if I completely lost it.
I’ll try it out one day.

Thank you for looking

Is it possible that the ESC fully off option can be coded into the GTi like it is on the R and that someone has done it?

I bought mine brand new so I assume this is a factory setting.
I certainly haven’t changed it

I seem to remember that one of the moans about the Mk7 by reviewers was that you can't turn ESC off.
You can set it to off, but it still intervenes.

I'm too chicken to test it !
I need an airfield/track covered in snow, with a lot of room before trying that.
We also have a Mk7.5 Fiesta ST and the ESP works in the same way: ESP on / ESP sport, TCS off / Everything off.
On that, when it's set to off, it really is off

I get crazy wheelspin with ESC off (long press) in my 2014 PP, they seem to spin up more easily than with it on.
I experimented in a straight line on a damp private road.

Try stabbing the throttle at low speed on a roundabout on a cold damp day.
I turned mine off on the way home today hoping to try but there was too much traffic.
It’s only relevant for track use- which isn’t important to me- but I’m curious now
